Cognac is typically made from various white grapes in the surrounding wine-growing region of Cognac. The brandys from the designated regions 'Cognacais', 'Charente' and 'Charente-Maritime' has been classified into six different grades (Crus). Cognac is an origin-protected designation (appellation d'origine contrôlée) and traditionally a blend (assemblage) of different brandys from the designated areas. The age of the cognac corresponds to the time it was matured in oak barrels, since the aging process is completed after bottling. The classification of the official quality grades is then made in accordance to the age.
